DISH - Sweet & Sour Chicken & Noodles


150g chicken breast meat, diced

¼ green peppers thinly sliced

¼ red peppers thinly sliced

½ onion/shallot thinly sliced

1 garlic clove chopped

½ tsp root ginger, chopped

1 Egg white

1tbsp cornflour

2 tbsp oil


50g noodles


2 tbsp sugar

2 tbsp vinegar

1 tbsp light soy sauce

1 tbsp dry sherry

1 tbsp tomato puree

1 tbsp cornflour

200ml chicken stock


Season the chicken pieces then mix them well with the egg whites and cornflour to coat the chicken. Mix all of the ingredients together for the sauce and set aside.

Heat the oil then stir-fry the chicken pieces for 5 minutes or until white all over. Remove with a slotted spoon and set aside. Add a little more oil to the pan and then stir-fry the shallots, ginger and garlic until soft. Return the chicken pieces to the pan and add the sliced peppers. Cook quickly then pour in the sauce mixture. Bring to the boil and ensure that the sauce is cooked out then serve straight away with stir fried noodles.

Place the noodles in hot water to re-hydrate them and drain well. Once drained heat the wok with a little oil and stir fry a little soya sauce may be added prior to service.
